Christmas in Tennessee

Better late than never. Here’s a report on our Christmas date, now that the pictures are finally out of the camera and edited. :)

Erick wanted to take Lindsey out on a date before we separated for the holidays. She thought they were just going out to dinner somewhere and exchange gifts… However, when they got in the car, Erick headed…NORTH! They were on their way to Knoxville, where Erick took Lindsey to an authentic Italian restaurant called Altruda’s. Hey, look, it’s our Disney movie! :) 

The food was… absolutely amazing. We had a mouthwatering Italian salad with chick peas, beets, fresh mushrooms and mozzarella cheese, fried artichokes, and these absolutely amazing garlic rolls. And that was before our actual dinner!

Here are our entrees. So delicious.

Then we got in the car, and Erick took Lindsey to another surprise location. An ice skating rink! :)


We had so much fun! (See the year in review video for clips!). But even that wasn’t all. Erick also took Lindsey to a park full of Christmas lights.


It was such an amazing date! Finally back at home, they exchanged gifts. Erick handpainted a mug for Lindsey, and Lindsey gave Erick a toy that he absolutely loves—an RC helicopter!

This was part of Lindsey’s Christmas gift to Erick—for him to watch online since she thought they would be separated for the holidays! More on that story later. :)

Erick and I had an argument.

  • Erick: I want to eat at curry pot.
  • Lindsey: I want to eat at Dragon.
  • Erick: But I want to eat at curry pot so you're happy.
  • Lindsey: But I want to eat at Dragon so you're happy.
  • Erick: But I want you to be happy.
  • Lindsey: But I want you to be happy.
  • : Hahaha. Sorry if I nauseated anyone. But I'm glad these are the kind of arguments we have.

Anniversary.

Its been over a month since we celebrated one year together, but we still want to share a few pictures and memories on this blog.

Erick surprised me with something special in the garage a little bit after midnight.


And then, a midnight snack. :) Hehe. Egg and rice are kind of a tradition.

The next morning, I was surprised with a delicious breakfast with lavendar citrus tea (teacups thanks to Sid!). On the tray was another rose and a little note with a special memory Erick had of our relationship.

After a rainy church service, Erick surprised me with another gift—a mini black and white polka dot umbrella (I am always losing and breaking umbrellas, haha). He also gave me a little box with more memory notes. I didn’t take a picture! :/

We spent the afternoon with friends at a big potluck, and then went back to my place for a glorious Sabbath nap. Then it was time to get ready for our evening date at a surprise location. Erick bought me a GORGEOUS dress from White House | Black Market. I’m spoiled!

Dinner was at Alleia! Here’s a few shots of what we ate. First off, one of two appetizers… we were brought the first one by mistake so it was free! Homemade ricotta bruschetta drizzled with honey. Amazing!

The actual appetizer we ordered was an amazing flatbread with truffle oil, garlic and spices and a soft taleggio cheese.

My dish was a wonderful ravioli with zucchini and mushrooms in a garlic butter/cream sauce. I don’t want to know how many calories it was! :)

Erick ordered pomodoro spinach gnocchi. Also amazing! Yes, we shared.

A great dinner! After we got home, Erick surprised me with a HUGE stuffed puppy, who was named Floppy, and later given the surname Disk. We still need a picture of Floppy!

I also had a surprise for Erick. I made him… a room. <3 Hanging around the room were all the reasons that I love him, and then in the center of the room were things he has given me throughout the year and, of course, my gifts to him… a picture frame with pictures from every week we’ve been together, a wallet, and a book.

We looked through our “scrapbook box” together, and watched a slideshow of pictures set to our favorite songs I’d made for him (the computer was on the empty chair below) and reminisced. <3 Happy Anniversary to us!

Dear Erick,

Happy Nine Months! It’s hard to believe nine months have passed since you asked me to be your girlfriend on September 1, 2011. These have been the happiest months of my life, and you have shown me in so many ways that I am truly blessed to have you in my life. You’ve treated me better than I could have ever thought possible, and you’ve proved me wrong so many times when my heart was afraid to trust. 

I love having adventures with you. You make the simplest things of life amazing, whether it be pumping gas at the gas station, having a spontaneous mini $5 date at Walmart, hunting for spiders, looking at the stars, going for a random walk, watching our favorite TV show together, going shopping, playing games on our phones, listening to music, having lunch, watching football—everything. Without me even telling you, you figured out how much I love discovering new things, and somehow keep taking me to places I’ve never been, finding new things for me to try. I can’t wait to spend more time with you learning about the world. I love dreaming with you about everything we are going to do together.

As much as I love that you have so many new things to teach me, I love that you and I have so many things in common. We truly are “better together.” I’ve finally found someone who loves New England sports teams as much as I do. Haha. :) I love making crafts with you. I love going on roadtrips with you, taking pictures with you, making videos with you, hanging out with other friends with you, laughing at silly things with you, cooking and eating with you. I love seeing you with your family, and I love seeing you with my family (I just love our families!). I love making music with you and using our gifts to serve the Lord. I love having worship together with you and talking about what we have learned. I love how you have used your leadership skills to help us get involved in a new church plant. I love enjoying nature with you.

Erick, you are a dream come true. I know we have arguments now and then, but I appreciate how we deal with them and learn from them. You inspire me and make me want to work hard for our future and for our love. You make me want to become a better person. I love you more than words can say. Thank you for your love, your patience, your commitment to me, and your heart. I could go on and on about everything I love about you and all the memories we’ve shared, but I guess I just have to say… Thank you for being you.

Massage & Lava Date.


So… if you’ve been keeping up with us IRL, you might know that we’ve had some pretty stressful things going on lately. One of Lindsey’s friends heard about our troubles at work, and out of the goodness of his heart, Matt gave us a gift card to Therapeutic Touch for two 30-minute massages. Talk about a stress reliever! The massages were wonderful and completely relaxing—exactly what we needed. We want to go again sometime! Thank you so much, Matt!


After our wonderful massages, we headed over to Chili’s, since Erick had a coupon for FREE Molten Lava Cake. We had a delicious dessert and then devoured… THIS!

The last part of our date was going to Lowe’s (a perfect date place, according to Erick) and wandering around the store. Okay, we were looking for wood for a new project in Erick’s room, and insulation for the ceiling pipes in the house. Haha. But we had so much fun!
